applesauce cookies

These are my husbands favorite cookies.  Makes about 50 cookies. They are soft and moist and the almond frosting makes them delightful.

5 1/2 cups flour
2 tsp baking soda
1 1/2 tsp salt
1 1/2 tsp cloves

1 cup butter
2 1/2 cups brown sugar
4 eggs
2 tsp vanilla
1 1/2 cups apple sauce

Toss in the all the dry ingredients into a bowl.  In a electric mixer toss in butter and sugar blend well. Next toss in the eggs  one by one mixing well in-inbetween each. Next add the vanilla.  Mix until fluffy.  Finally, toss in applesauce and then add the flour mixture stir well.  Use a ice cream scoop that is about 1 tbsp.  Bake 10-12 minutes at 350 degrees. Make sure that edges are lightly brown.

Note- I line the cookies sheets with parchment paper and sometimes I can raisins (about 1 1/2 cups)

After they cool frost each cookie:

1/4 cup butter
8 ounce cream cheese, softened
2 1/2 cup powdered sugar
2 tsp almond extract

Cream butter and cheese then slowly add powdered sugar and extract. Mix well.  If its to thick add 1 tbs milk..

Snicker doodle Cheesecake


Take shortbread cookies and finely grind them to make about 1 1/4 cup crumbs
1 tbsp sugar
1/4 cu butter, melted

Mix these together and press firmly into a 9" spring form pan


16 oz cream cheese, soften at room temperature
1 cup sour cream
1 cup sugar
2 tbsp flour
2 tsp vanilla
1/2 tsp cinnamon

Mix these ingredients until smooth then add:

3 eggs.

In a small bowl make cinnamon sugar with 1 Tbsp sugar 1/2 tsp cinnamon
Pour cheese mixture into spring form pan and sprinkle with cinnamon sugar mixture.  Bake 40 -50 at 350 minutes.  Until about 2 1/2 inches of the appear done then remove from oven.  Let cool and remove from spring pan.

Maple Pumpkin Pie

1 9" pie crust (refer to pies for crust recipe)

2 cups pumpkin
2/3 cup maple syrup ( the real stuff)
1/4 cup Brown sugar packed
1 tsp vanilla ( you can use vanilla bean paste)
1/2 tsp salt
3 eggs
3/4 cup milk


Combine all ingredients and pour into pie crust.  Bake at 350 for 40-50 minutes or until you insert a knife and it comes clean.

If you want add a little decorative brittle for presentation here is a Salted Pecan Brittle that can be arranged around the pie top.

Line a baking pan with foil and coat with cooking spray or butter.

In a sauce pan toss in 3/4 cup sugar and 1/4 cup water.  Stir gentle on medium heart and bring to a boil. (about 10 minutes) boil until the color appears dark amber.

Stir in 3/4 cup toasted pecans and 1/2 tsp sea salt.  Remove from heat.
Pour this mixture in the prepared baking pan and spread evenly.  Sprinkle with 1/2 tsp sea salt. Cool Completely.  I break this up and then arrange this around the pie top.  Serve with whipped Cream.

Ginger Pear Turkey with Glaze

I'm going to be making this old recipe for Thanksgiving this year and thought I'd post it.

1 Turkey (14 pounds)
2 pears
2 lemons
2 cinnamon sticks
2 one inch thick pieces of Fresh Ginger
8 Whole Allspice

Cut up the pears and lemons and stuff the Turkey with all the ingredients.

Glaze- Makes 2 cups

3 cups pear juice
2 cinnamon sticks
2 half inch thick pieces of Fresh Ginger
6 whole allspice

Toss all the ingredients in a sauté pan, bring to a boil, reduce heat and simmer for 30 minutes uncovered. (this should reduce to about 1 1/2 cups) Using a slotted spoon, removed spices and stir in;

1/2 cu sherry preserves
2 Tbsp Red Wine Vinegar
1/4 tsp salt.

Cranberry BBQ Sauce

1 onion finely chopped
1Tbsp olive oil

Sauté over medium heat until onions are clear

1 3/4 cup cranberry sauce.  ( you can use one can, I make my own)
1 cup cranberry/pomegranate juice
2/3 cup chili sauce
1 Tbsp balsamic vinegar
1 tsp dry mustard.

Toss all this in the sauté pan with the onions and bring to a boil, then simmer for 25 minutes.
Stir in 2 Tbsp oregano.

Makes 2 1/2 cups

1 cup sugar
1 cup brown sugar
1 cup shortening

5 cups flour
1 tsp cinnamon
1 tsp soda
1 tsp salt

Mustard

2 tbsp flour
2 Tbsp sugar
2 Tbsp dry mustard
1 tsp salt
1/2 cup vinegar
1/2 cup water
1/2 tsp tumeric

Mix dry ingredients, add water slowly till a smooth paste is formed.  Add rest of water and vinegar.  Cook slowly, stirring constantly for five minutes.

Iva's doughnuts

1/2 cup sugar
1 cup milk
2 eggs well beaten
1 tsp vanilla
1/2 tsp nutmeg
3 Tbsp butter or lard melted
Pinch of salt
4 cups flour sifted 3 times with
2 tsp of baking powder

2 cups apple sauce

1 1/2 cup sugar
1/3 cup of boiling water with 2 tsp soda disolved
1/2 cup shortening
 More than a sifter full of flour

1 cup nuts

Sunshine Cake

1 cup cake flour
1 tsp baking powder
1/2 tsp salt
6 eggs
1 cup sugar
1/4 cup strained orange juice
1 tsp grated orange rind

Sift flour 4 times with the baking powder and salt.  Beak yokes until foamy and thick.  Add sugar gradually and continue beating until stiff. add orange rind then the orange juice and flour alternately. stirring thoroughly, fold in egg whites last.  Bake in angel tin.

Cake icing- from the egg yolks

2 egg yolks
3/4 cup sugar
1 tbsp butter

Cover 3/4 cups of sugar with boiling water and boil till thread stage, pour over beaten egg yolks and beat til creamy add butter.

Mag's Cookies

1 cup sugar
1/2 cup shortening
1 egg
1/2 cup canned cream
1 Tbsp vinegar
1 tsp baking soda
1 tsp baking powder
flour and salt

2/3 cup of butter or fat
1 1/34 cup sugar
2 eggs
 3 cups flour
1 1 /2 tsp salt
2 tsp baking powder
grated rind of one orange
1 tbsp orange juice

Maple Pralines

2 cups sugar
2-3 cups milk
1 cup maple syrup
2 cups pecan

Boil sugar, milk and maple syrup until the mixture reaches the soft ball stage, 238 degrees.  Remove from the fire and cool.  When it is luke warm beat until it is smooth and creamy.  Add any kind of broken nuts and drop by the spoonful of buttered paper, making little mounds.

Penoche

3 cups brown sugar
1 cup milk
2 Tbsp butter
1 tsp vanilla
1 cup nuts

Put the sugar and milk into a saucepan and cook to the soft ball stage, 238 degrees.  Remove from the fire , add butter and vanilla and cool without stirring.  When it is lukewarm, beat until creamy.  Stir in the broken nuts, pour into a buttered pan and when it hardens cut into squares.

Divinity Fudge

2 cups sugar
1/2 cup corn syrup
1/2 cup water
3/4 cup candied cherries
2 egg whites
3/4 cup blanched almonds,
1tbsp lemon or almond extract

Put the sugar, water and corn syrup into a saucepan. Stir it while it dissolves over the fire, then let it boil without stirring, to the light crack stage, 265 degrees.  Whit it is cooking, beat the egg whites stiff and when the syrup is ready pour it over them. beating constantly.  Beat until creamy add nuts, cherries, and extract and pour into buttered tins.

Coconut Balls

1 1/2 cup coconut, shredded
1/4 cup peanut butter
and 1/2 tsp vanilla

Mix well, form in small balls and roll in powdered sugar.  Keep in ice box (refrigerator) until ready to serve.

Crackerjack

3 cups popped pop corn
1 cup roasted peanuts
1/2 cup corn syrup
1 cup sugar
2 Tbsp butter
2 Tbsp cider vinegar
1/2 cup water

Mix sugar, syrup, vinegar and water.  Cooks slowly until brittle when tested in cold water.  Add soda and mix well. Pour hot mixture over the popcorn and nuts and spread in a buttered pan.  Let sit and cool.  Cut into narrow slices.

(I don't see how much soda to add so i'm going to guess at 1/2 tsp baking soda)

Cake Brownies

1/2 cup shortening
2 (1 ounce) squares unsweetened chocolate
2 eggs
1 cup sugar
1 tsp vanilla
3/4 cup flour, sifted
1/2 tsp baking powder
1/2 tsp salt
1 cup walnuts, chopped

Melt shortening and chocolate together over very low heat, stirring well. Beat eggs, stir in sugar, then chocolate mixture and vanilla.  Add sifted dry ingredients, mixing well.  Add nuts.  Bake in 8x8 pan at 350 for 30 minutes or until done.  Cool. Sift powdered sugar over top and cut into bars.

1/8 tsp salt
2 eggs
1 cup scalded milk
2 tsp butter
 1 tsp vanilla

Ella's Fresh Apple Cake

4 cups diced apples
2 cups sugar
1/2 cup cooking oil
2 eggs well beaten
1 cup nuts
2 tsp vanilla
3 cups flour
2 tsp soda (baking)
2 tsp cinnamon

Peel and dice apples.  (not to fine)  Add sugar and mix.  Sift dry ingredients add to apples.  Mix oil, eggs, nuts, and vanilla.  Combine all  together.  Bake 350 for 1 hour.  ( she does not write a size of pan she used.  So I'm going to guess, until I try this out my self that it's a square pan 8x8. )

Walnut Bread

3 cups four
4 tsp baking powder
1 cup sugar
1 tsp salt
1 cup chopped walnuts
1 Tbsp butter
1 egg, beaten
1 1/4 cup milk

Sift flour once, measure add baking powder, sugar and salt and sift together three times.  Add nuts.  Melt butter and add to beaten egg and milk.  Combine this mixture with the dry ingredients stirring only until blended.  Bake in greased loaf pan at 350 for 1 hour and 10 minutes.
