
8 small ripe tomatoes (1 1/2 lbs)
1 large garlic clove minced
Salt and Fresh ground pepper
2 tbsp extra virgin olive oil
10 fresh basil leaves
24 thin baguette slices
Cut tomatoes in half and clean out the seeds. Next, dice the tomatoes. In a bowl combine the tomatoes, garlic, 3/4 tsp salt and 1/4 tsp pepper and olive oil. Lastly, toss to coat evenly. You can add additional salt, pepper and garlic by tasting it at this point. Let the mixture sit for at least 30 minutes to allow the seasoning and flavors to blend.
Preheat your oven to 350F. Arrange the baguette slices on a baking sheet and brush them lightly with olive oil. Bake until golden approximately 10-15 minutes. Let cool. Stack the basil leaves in a neat pile and cut them up thinly and add to the mixture and toss. Top each baguette slice with 1 spoonful of the tomato mixture and serve.
