
1 cup butter room temp
1 1/4 cup sugar
1 egg yolk
1/2 cup sour cream or plain yogurt
2 1/2 cup flour
1/4 tsp salt
1/2 tsp grated nutmeg or ground
1/4 tsp ground ginger or fresh
Mix butter and sugar in large bowl at medium speed until light and fluffy. Add egg yolk, sour cream and mix well. Mix in together the flour and salt in a separate bowl then gradually add the flour mixture to the butter mixture. Shape dough into teaspoon size balls and flatten slightly. In a small bowl mix together 1 tbsp sugar, and the nutmeg and ginger and then sprinkle this over the cookie dough. Place tsp of dough on a lightly greased cookie sheet. Bake for 12 minutes or until lightly golden on edges, at 350 F then cool 5 minutes on cookie sheet. Remove and prepare filling.
Filling
1/2 cup butter, at room temperature
1/4 cup shortening
2 1/2 cups powdered sugar
2 tbsp milk
Mix together butter and shortening add powdered sugar and milk. Mix until well blended. Spread on the bottom of one cookie then top with the bottom of another cookie.
