Flaky Pie Crust

2 cups flour
1 tsp salt
2 tbsp sugar
1/3 cup butter
1/3 cup chilled vegetable shortening
1/3 cup ice water

In a large bowl mix together flour, salt and sugar. Add the butter and shortening by cutting in small chunks at a time. ( I use my fingers for this) Mix together until it looks like crumbs. Next, add the water and quickly mix with a fork or fingers to form a soft dough. Add another 1 or 2 tbsp cold water if the dough appears to be too dry. Dump the dough on a floured work surface and work gently into a ball. Wrap in plastic and refrigerate for at least 30 minutes. Roll out working quickly and place in pie pan. Makes a 9 or 10 inch pie.

This pastry can be frozen or refrigerated in the pie pan for several days before baking.
