These are just suggestions. You will have to experiment yourself with each of the variations. I do not like to use alcohol in recipes. I think their may be a slight difference in taste but its minimal and if you haven't ever had alcohol you'll never know the difference. I do not drink alcohol therefore I can not give you any comparison and it is just my opinion. All of the recipes I have made omitting the alcohol were delicious and savory. The great thing about cooking is your the master taster. Do what tastes great to you and always experiment.
Rum- substitute 2 tbsp rum with 1/2 to 1 tsp rum extract or it you don't have that try 2 tbsp water, white grape juice or apple juice.
Bourbon- substitute chicken broth, white grape juice, or ginger ale in the same amounts as the recipe.
Red Wine-substitute the same amounts as the recipe with any of these. Water, white grape juice, apple juice, chicken broth, grape juice vegetable broth, cranberry juice; tomato juice; or concord grape jelly.
If the recipe calls for 1/4 cup or more red wine, substitute equal measurements of red grape juice, cranberry juice, apple cider, chicken broth, clam juice or flavored vinegar.
White wine- substitute water, white grape juice, apple cider, apple juice or vegetable broth.
If the recipe calls for 1/4 cup or more white wine, substitute equal measurements of white grape juice, chicken broth, vegetable broth or clam juice.
Amaretto- if the recipe ask for 2 tbsp amaretto or other almond-flavored liqueur, substitute 1/4 to 1/2 tsp almond extract.
Beer- substitute Chicken broth, white grape juice, or ginger ale in equal amounts called for in the recipe.
Sherry-if the recipe calls for 2 tablespoons sherry, substitute 1 to 2 tsp vanilla extract or 2 tablespoons orange or pineapple juice.
If the sherry is in a marinade substitute a 1/2 cup sherry for 1/4 cup vinegar, 1 tbsp sugar and 1/4 water. Another substitution is 1/2 cup chicken stock or water and 1 tbsp vinegar.
If you are preparing a soup or pan sauce use extra broth and add red or white wine vinegar or lemon juice right before serving. Substitute 1/2 cup wine with 1/2 cup broth and 1tsp white wine vinegar or 1/2 cup broth and 1 tsp lemon juice.
