1/2 cup butter
3/4 cup sugar
1/3 brown sugar, packed
1 egg
2 cups flour
2 tbsp crystallized ginger, minced
2 tsp fresh ground ginger, (you can use ground too)
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground cloves
1/2 tsp salt
1 cup molasses
1 cup boiling apple cider
In a mixer toss in butter and beat at medium speed until creamy. Add sugar and egg mixing well. Next in a bowl combine the flour, both gingers, baking soda, cinnamon, cloves, salt. Take this mixture and add it to the butter mixture. Then add the boiling apple cider and molasses. Mix well and medium speed. It should be smooth. Pour the batter in a 13x9 baking pan and bake 325F for 40 minute or until a knife comes out clean. Let cook and cut into squares. I like to serve it with a the molasses and ginger whipping cream on each square.
