
These are absolutely one of our favorite cookies. Talk about yummy and delicious.
3/4 cup butter
1 1/4 cup brown sugar, packed
1 egg
1/4 cup molasses
2 1/2 cups flour
1/2 tsp salt
1/2 tsp baking soda
2 tsp ginger, fresh or ground
1/2 tsp allspice
In a mixer toss in butter and sugar and mix at medium speed until there is a grainy paste. Add egg and molasses and mix until light and fluffy. In a bowl combine the flour, baking soda, salt, ginger and allspice. Toss this into the fluffy mixture and mix just until they are moist. Form dough into 1 inch balls or use a ice cream scoop. Next roll them in sugar and place them on a baking sheet. Bake at 300 for 25 minutes or until light brown. Remove and let them cool.
Additional option: I love ginger so I add about 1 tsp crystallized ginger and 1/2 tsp or so of fresh ground black pepper to this recipe to enhance the flavor in the cookies. If you find the dough to sticky to handle, place it in the refrigerator for 1/2 hour to make it easier to mold.
