Macadamia Lime Tart

If you love key-lime yogurt then you 'll love this!!

1 package graham crackers, made into crumbs
1/2 cup macadamia nuts, finely chopped
1/4 cup sugar
1/3 cup butter, melted or very soft
6 eggs
1 1/2 tbsp grated lime rind
1/2 cup lime juice, I use fresh but the other will do. (about 6 limes)
1 cup sugar
1/3 cup butter
1 drop green and yellow food coloring or paste

First mix together the graham crackers, nuts, sugar and butter. I use my hands to mix and press evenly into a 10 inch tart or pie pan. Bake the crust for 8 minutes at 350. let it cool.
While crust is baking. In a non-aluminum saucepan whisk together eggs, lime rind and juice, over medium low heat. Toss in the 1 cup of sugar, 1/3 cup butter and the food coloring. Note that the food coloring is optional. It will turn out perfectly fine without it. Stir until thick and lightly bubbly. Let the mixture cool for about 15 minutes. Pour the mixture into the crust and over and place into the refrigerator for a minimum of 4 hours. Top with whipping cream.
