Apple Muffins

1 egg
¼ butter, melted
½ cup brown sugar
2 ½ cups flour
½ cup whole wheat flour
4 tsp baking powder
½ tsp salt
1 cup milk or half and half
2 medium size apples diced, peeled

In a medium bowl beat egg and then add butter and sugar blending well. In a small bowl toss in both flours, baking powder and salt mix well. Pour the flour mixture into the egg mixture and add the milk, folding in apples. Butter a muffin pan and spoon the batter in. Sprinkle the muffins with a mixture of 2 tsp sugar and ½ tsp ground cinnamon. Bake at 375 for 20 minutes or until lightly brown. I run a knife around the sides of each cup and turn the pan upside down tapping at the top to dislodge the muffins.

Note: I use large muffin pans. Regular muffin pans will work too. These freeze very well, my kids like them frozen , however you can let them thaw on the counter for an hour or so. I make these and let the kids eat them when they want.
