
1/2 cup chicken broth
2 tsp finely shredded lime or orange peel
2 tsp lime juice
2 tsp brown sugar
1 tsp curry powder (2 tsp if you really like curry flavor)
1 tsp cornstarch1 pound chicken (can be breast halves, thighs etc.)
2 tsp olive oil (or peanut oil)
2 cloves garlic minced ( I use a micro plane)
1 cup onion (I use red but you can use what you have on hand)
2 cups mango chopped and peeled (you can get these ready to use at Costco in the refrigerator section)
In a small bowl toss in broth, shredded orange peel, lime juice, brown sugar, curry powder and cornstarch, then mix and set aside.Rinse chicken and cut into strips. In a large skillet add the oil and heat on med. high. Toss in the garlic and onions cooking for about 2 minutes. Next toss in the chicken and cook until the chicken is no longer pink about 4 minutes. Add the liquid mixture that was set aside to chicken and cook and stir until it is thick and bubbly. Add mango and heat for 2 minutes. Serve over rice.
