
1 3/4 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground nutmeg
1/8 tsp salt
3/4 cup pumpkin
3 tbsp oil
2 tbsp brown sugar
In a large bowl mix together flour, baking powder, baking soda, nutmeg and salt. In a small bowl mix pumpkin, oil and brown sugar. Combine the pumpkin mixture to the flour and stir until a rough ball is formed. Next knead 10 times then divide dough into halves. Roll each half into a 10 inch circle cutting into 8 sections. (like you would cut a pie). Starting at the outer edge roll toward the middle point. Place point side down on a baking sheet lined with foil. Curve the ends of the rolls to look like a crescent shape. Sprinkle cinnamon and sugar over them and bake at 400 for 9 minutes or until lightly brown.
Note-Kneading the dough 10 times is enough to distribute the moisture for these rolls. Try not to over knead them. Also, these will complement chicken, rice and vegetable dishes. These are light and healthy too.
