Pecan Salad


1 cup apple cider
2 tbsp cider vinegar
1 tsp Worcestershire sauce
1 tsp hot pepper sauce
1 tsp thyme chopped
2 tbsp olive oil
2 granny smith apples, cored and thinly sliced
½ cup pecans, toasted
Mixed greens- your choice


In a small sauce pan, bring apple cider to a boil then simmer until it reduces to about 2/3 (this takes about 5 minutes) Next, add the vinegar, Worcestershire sauce, hot pepper sauce, thyme and salt and pepper. Slowly whisk in the oil. Toss any mixed greens in a bowl add the apples and half the dressing and toss together. Arrange the salad on plates and top with pecans, drizzle the remaining dressing over the top. Sprinkle with feta or blue cheese.
