Fudgy Delight

1 cup butter
2 cups sugar
4 eggs
1 1/2 cups flour
3/4 tsp tsp salt
2 1/4 tsp baking powder
1/2 cup cocoa
1 jar marshmallow creme

In a mixer toss in butter and sugar and cream together until light and fluffy. Add eggs, one at a time and beat very well after each. In a small bowl toss in flour, salt, baking powder, cocoa and mix well. Gradually add this to the butter mixture. Grease a 9x13 cake pan and spoon the batter out evenly in the pan. It will be thick. Bake at 350 for 30-35 minutes or until a knife comes out clean. ( It will drop in the center, so don't panic) Let it cool a few minutes then spread the marshmallow over cake and let cool completely. Next is the frosting.

1/2 cup butter, softened
3 3/4 cup powdered sugar
3 tbsp baking cocoa
1 tbsp vanilla extract
4-5 tbsp milk

In a electric mixer toss in the butter and cream. Add the sugar and vanilla beating until light and fluffy. Scrape down sides as you go. Next add the cocoa and milk. It should be nice and fluffy. Finally, spread this over the marshmallow layer.


Note- If you like nuts try adding 1 cup of pecans to the batter. I have not made this with nuts yet but I think it would complement it well.
