
1 zucchini or yellow squash
1 red or green sweet pepper
1 medium onion
1 can chicken broth or stock (about 14 oz)
6 cups torn spinach
1 1/2 cups carrots, sliced
1 cup cheese tortellini
1 tsp basil, dried
1/2 tsp oregano, dried
2 cups cooked chicken, chopped
I add a 1/2 tsp of any seasoning I am in the mood for. You can omit this is you want.
Slice the zucchini lengthwise and cut into 1/2 inch slices. Chop up sweet pepper and onion. In a large sauce pan toss in the broth and 2 cups of the water and bring to a boil. Toss in the zucchini, sweet pepper, onion, spinach, carrots, tortellini, basil, oregano, seasoning and freshly ground black pepper. Reduce heat and simmer, covered until tortellini and veggies are tender.
Toss in the chicken and cover and cook for another 5 minutes. Sever hot.
