Wheat oat bread

1 cup oats
2 cups boiling water
1/3 cup Bulgar wheat
3 tbsp honey
1/2 cup water at about 110 F
2 1/4 tsp yeast
1 1/2 cups whole wheat flour
1 tbsp plus 1 tsp salt
2 -3 cups white flour

In a bowl toss in oats and water and let stand until mixture has cooled. Toss in the Bulgar wheat and honey and set aside.
In a small bowl toss in the water and sprinkle the yeast over it. Let stand until foamy.
In a electric mixer with a dough hook toss in the oat mixture, yeast mixture, whole wheat flour, salt and 2 cups of white flour and beat until smooth. Continue to add white flour slowly until dough is tacky but not sticky and from this point continue kneading for 5 minutes. Butter a large bowl and place dough in it and cover with plastic wrap. Let rise in a warm place until dough has doubled. about 1 1/2 hours. Punch the dough down down and form into a loaf, lightly mist with water and sprinkle with a few oats (if desired, this make it look pretty, but you can omit this step if you want) Place into a loaf pan and cover with plastic and let rise until double, about 1 hour. Preheat oven to 375 then bake until brown for about 1 hour. When cooling take out of pan and let sit inverted on pan or a wire rack.
