My Favorite Blueberry Muffins

2 cups flour
1 cup sugar
3 tsp baking powder
1/2 tsp salt
2 eggs
1 cup half and half (or use what you have on hand)
1/2 cup melted butter
1 cup fresh or frozen blueberries. ( I usually use fresh but frozen works too!)

In a large bowl toss in the flour, sugar, baking powder and salt. In a small bowl toss in the eggs and beat slightly, cream, and butter and mix together. Pour this into the flour and mix until moist. Fold in the blueberries.

I use jumbo muffins because regular size just doesn't last for us. You can use regular too. I fill them 3/4 full. Bake at 400 for 22 minutes unless it's a dark pan then I bake at 375. They our ready when you insert a knife in the middle and it comes out clean.

If you use frozen berries do not thaw them. This will make 6 jumbo muffins or about 16 regular.
If you use regular muffin tin bake for 18 minutes.

Note- These are my favorite muffin recipe. Anyone can make it and I've used raspberries and they still come out perfect. If you like a lemon raspberry version just add 1 tsp of lemon juice or extract. If time is of the essence I have quickly tossed everything into a large bowl and mixed. They still turn out great. Also, I freeze the extras and the boys just pull them out of the freeze when ever they wish. They still taste good after their frozen too.

Here is a picture of the muffins with using raspberries instead of blueberries.. The picture isn't very good but the muffins were delicious.
