Roasted Pumpkin Seeds

What to do with all those seeds after caving pumpkins, or at least some of them.

2 cups fresh pumpkin seeds
2 tbsp dried rosemary
2 tbsp olive oil
2 tbsp coarse salt, I like sea salt for this

After digging the seeds out of the pumpkin I wash the seeds in water and drain on baking sheets lined with paper towels. I let them dry, this could be several hours it's up to you. I usually let them sit until the next day. Toss the seeds with all the above ingredients and spread on the baking sheets. Bake at 350 for 10 minutes or until crisp. Then enjoy.
