Tomato Herb Rolls


1/2 cup warm water
2 tsp yeast
1 tsp sugar
4 cups flour
1 tsp salt
2 cloves, minced
1/2 cup sun dried tomatoes
1 tbsp oregano, chopped
1 tbsp thyme, chopped
2 tbsp Italian parsley, chopped
2 tbsp butter, melted
3/4 cup milk

In a small bowl toss in the water, yeast and sugar and let activate. If will be frothy this take about 10 minutes. Meanwhile. In a bowl or electric mixer toss in the flour and salt and create a hole in the middle. Toss in the garlic, sun dried tomatoes, oregano, thyme, parsley and pour the melted butter, yeast and milk. Mix until you have a soft dough. Knead for 10 minutes by hand or 8 minutes with electric mixer. Grease a bowl and place dough in and cover with plastic wrap. Let rise about 45 minutes in a nice warm area. Punch down and knead several times. Divide the dough into 12 and roll into balls. Place them on a greased baking sheet, cover and let rise 30 minutes. They will be slightly less than doubled. Brush with milk on tops of dough and bake in a 350 oven for 20 minutes or until golden brown.

Note- When rising bread you can heat the oven for 1 or 2 minutes on 350 them turn it off. Place the dough in the oven to rise. Just make sure you don't heat the oven to hot. Just warm it up. I've found that the dough rises best in warm moist areas so if it is dry in your area place a broiler pan on the bottom of the oven and put 2 cups boiling water into it. Let your dough rise on the middle rack.

These are the best rolls anyone could ever eat just try them we have had them at Lauries before Thanksgiving and then again Thanksgiving they are simply delicious. You do a great job Love Mom
