1 cup warm water
1 tbsp brown sugar
2 tbsp yeast2 cup milk
1/3 cup brown sugar
1/3 cup butter or soft margarine
4 tsp salt
4 eggs
5 cups whole wheat flour
2 cups white flour
Mix the water, 1 tbsp brown sugar, and yeast. Let sit until yeast begins to bubble. In a small sauce pan scald the milk and toss in the brown sugar, butter and salt. Set aside and let cool. In a mixer pour the milk mixture and add eggs, then when the yeast is bubbly add that to the mixer. Next add the whole wheat flour continue mixing, gradually adding the white flour. The dough will be sticky so don't worry. Oil or grease a large bowl and place the dough in the bowl and cover with plastic wrap. Refrigerate the dough for 3 hours.
Next, punch down the dough and let it rise in a warm bowl until doubled. Punch down again and place into 2 greased loaf pans and cover with plastic wrap and let rise about 30 minutes. Bake at 350 for 30-45 minutes or until the loaves are light golden brown. Remove from oven and pans. Rub the tops with butter and let cool.
Note- The dough will be very sticky. To help transition the dough to the bowl, I keep my hands floured and removed the dough. This is a great bread, we love eating it. Also, you can use powdered milk and will will turn out just as good. I use fresh ground white or red wheat and regular white flour.
Options: I sometimes replace 1 cup of wheat with: 1/4 cup wheat germ 3/4 cup oat bran.

Forgot to tell you I made the bread a few weeks ago and it was SO yummy. It was a little doughy in the middle, I took it out because the top was browning and I didn't want it to burn. I'll leave it in longer next time. Thanks again for posting, the flavor and texture was great!
