Enchilada Soup doubled recipe

Today I made enchilada soup and doubled the recipe using 1 can of green enchilada sauce (medium).  I put 4 chicken breast in and simmered it on low heat (Stove top method) It was a bit spicy, kinda reminded me of the tortilla soup from claim jumper. Spicy and nice.  This fed my entire army of boys and some leftovers for lunches.  This is super easy and if your a crock-pot guru then it's even easier.
