Cranberry Butter

2 tbsp brown sugar
2 tbsp honey
3/4 cup soften butter
1 cup fresh cranberries, chopped
2 tbsp walnuts, toasted and chopped (optional)

In a electric mixer toss in butter, sugar and honey and mix until fluffy.  (about 5 minutes)
Toss in cranberries and walnuts mixing for another 5 minutes or until it has a pink color.  Place a
large sheet of plastic wrap on the counter and scrape the butter mixture onto the middle of the plastic and roll into a log shape.  Refrigerate until chilled.

Note- I am going to use this for thanksgiving this year accompanied with hot fresh bread.  It is delicious and can be prepared several days in advance.  I serve it sliced on a butter dish and usually prepare two ( 1 with nuts and the other without) because its a favorite and disappears quickly.
