Green Beans and Carrots

1 cup baby carrots
1 cup fresh green beans
1/2 cup chicken broth
6 cups water
1 tbsp butter
1 tsp sugar
Salt and fresh ground black pepper

In a large pan toss in the water and bring to a boil.  Toss in carrots and cover, cooking for 2 minutes.  Next, toss in green beans, cover and cook for 3 mintues (this is blanching the veggies) You want a bright green color. Meanwhile, in a large bowl place 3 cups of ice.  When carrots and green beans are finished cooking place them in the ice water.  Next, in a large skillet toss veggies, butter and then broth, bring this to a boil and cook this until it has reduced to 3 tsp. Toss in the sugar cook and stir for about a minute.  Salt and pepper to taste.  Serves  6.

Note- Costco has fresh baby carrots and green beans at very reasonable prices.  This is an easy yet very tasty way to serve veggies to kids.  I'm adding this to my Thanksgiving menu.
