Gingerbread Muffins

2 cup flour
1 tsp baking powder
1 tsp ginger, ground o crystalized
1 tsp cinnamon, ground
1/2 tsp baking soda
1/4 tsp salt
2 egg white, slightly beaten 
2/3 cup molasses
2/3 cup water
2 Tsp canola oil

In an electric mixer toss in the egg white, molasses, water and oil. Mix on speed 4 until it is well blended.  In a large bowl toss in the flour, baking powder , ginger, cinnamon, baking soda and salt.  Whisk together then pour this into the wet mixture and mix well.  Pour into muffin pan and bake at 350 for 12-15 minute.

Note: You can line muffin pan with baking cups or spray with a non-stick oil and pour directly into muffin pan.  I like to serve these with powdered sugar sprinkled on top right before we eat them. Yummy!!
