Carrot Muffins

1 cup flour
1 cup wholewheat flour
3 tsp baking powder
3/4 tsp salt
1 cup grated carrot, loosely packed
1 large egg
1 cup milk
1/4 cup honey 1/4 cup butter melted

Stir together flours, baking powder and salt, add carrot.  Beat egg and milk and boney to blend.  Add to flour mixture with butter.  Stir only until dry ingredients are moisten.  Spoon into buttered muffin pan cups. Filling about 3/4 full.  Bake in a 400 degree oven until center comes out clean when inserted with a knife.  25-30 minutes.  Makes 12
