1 cup cooked and mashed sweet potatoes
1/3 cup butter melted
2 eggs, beaten
1/3 cup milk or half and half
1/2 tsp baking powder
pinch of salt
1 tsp nutmeg
1 tsp vanilla
1 cup sugar or less if desired
1 unbaked 9 inch pie shell
Combine sweet potatoes with all ingredients except pie shell. blending well. If hand mixing use a wooden spoon. Pour into pie shell. Bake in 400 oven about 30 minutes or until golden and puffy.
