Fresh Roasted Asparagus


2 1/4 pounds Fresh Asparagus trimmed
2 tbs extra virgin olive oil
Salt and freshly ground black pepper

Set oven at 400F. Rinse the asparagus and pat dry. Spread asparagus on top in a single layer. Drizzle the olive oil to coat the asparagus completely, and then sprinkle with salt and pepper. Roast for 10 minutes or when they are tender but still crisp.

Note: If you are baking chicken or something else at 350F. You can put this in at the same time. Just increase the cooking time to 12 minutes or when they are tender.
You can use this same technique with fresh green beans.

This is so easy, but looks and tastes like something you would find at a fancy restauarant. I love it!
