Apricot Sweet Rolls

2 cups sugar
1 tbsp grated orange rind
3/4 cup dried apricots chopped or diced
½ cup butter, melted
½ cup finely chopped toasted walnuts
2 ½ cups powdered sugar
¼ cup fresh orange juice
1 batch of Yeast Roll dough (look under bread on homepage)

In a small bowl toss in sugar,orange rind and walnuts. Prepare 1 batch of the yeast rolls recipe letting in rise once. On a floured surface knead dough several times and then divide in half. Roll the dough in a rectangle about 12x18. Pour half the butter on the dough and smooth around. Spread half of the sugar mixture from the small bowl over the buttery dough Roll the dough up starting with the long side. Cut each log into 1 ½ in thick slices and place them in a lightly greased baking pan. (I use round ones) Repeat with the other ball of dough. Lightly cover with plastic and let rise until rolls have doubled in size. Bake at 375 until they are lightly browned or about 15 minutes. Here is the best part… Mix together powdered sugar, orange juice. Drizzle over warm rolls. These are so good hot out of the oven and they never last very long. They can be warmed up the next day too!
