2 Boxes any Chocolate Cake Mix
1 large can (29ish oz.) Pumpkin (or 2 small cans)
1 11.5 oz Pkg Milk Chocolate Chips
Mix together and put spoonfuls into muffin pans sprayed with cooking spray or lined with baking cups. Bake at 350 degrees for about 15 minutes. The pumpkin adds tons of moisture and some nutrients without the pumpkin flavor. The chocolate masks the flavor completely, so they’re a great, lower fat option for kids since they don’t have all the butter, shortening, or oil like other recipes. You could also use spice cake mix to make pumpkin chocolate chip cupcakes/muffins.
Staci brought these yummy treats to the class today. Instead of regular size cupcakes she made mini ones. What a great idea for all of us who like to give a plate of little treats to those cherished friends. Thanks Staci!!!
