
1 ½ pounds chicken (thighs, drumsticks, legs, breast)
1 onion, chopped
1 carrot, chopped
1 cup broth (whatever you have on hand)or water

1/2 cup pearl barley
1 garlic clove, minced
Salt and fresh ground pepper

2 Tbsp fresh parsley for garnish when serving
In a large Skillet, drizzle a bit of olive oil and toss in the chicken. Cook for 10 minutes until it is browned. Remove from skillet. Toss in the onion, carrot, broth, barley, garlic, salt and pepper. Bring to a boil. Grab a baking dish pour the hot mixture into it and place the chicken on top. Bake covered at 350 for 1 hour or until the barley and chicken are no longer pink. Sprinkle with fresh parsley just before serving. This will feed 4
Note: If you use water instead of the broth use 1 tsp bouillon granules to add flavor.
