
4 oz Cream Cheese (softened)
¼ cup green onions, sliced
1 tbsp milk
½ tsp dried basil, and rosemary, crushed (1 tbsp fresh)
4 chicken breast halves, skinless, boneless
6 sheets of phyllo dough, thawed
2 tsp butter
1 tbsp grated Parmesan cheese
The Filling, In a mixer, blender or food processor, toss in the cream cheese, green onions, milk, basil and rosemary. Blend well. Next, place 1 sheet of phyllo dough on a flat surface and brush with melted butter or spray with a cooking spray. Grab a second sheet and brush with melted butter or spray with a cooking spray. Repeat with a third sheet. Cut the stack of phyllo in half. Place a chicken breast diagonally across 1 corner of the dough. Take ¼ of the filling and spread over the chicken. Next, fold the side, roll up the chicken and secure with toothpicks. Repeat with the 3 additional breasts. Spray, butter or oil large baking pan and place the chicken breast seams side down in it. Brush with melted butter and sprinkle with Parmesan Cheese. Bake at 400 for 30 minutes or until golden brown.
