3 1/2 cups rolled oats
1/2 cup oat bran
1/2 cup whole raw almonds
1/2 cup apple juice
1/2 cup honey
1 tsp cinnamon
1 tsp vanilla
4 egg whites
1/4 cup sugar
1/2 cup raisins
Toss the oats on a baking sheet and toast in the oven at 350 for about 15 minutes. In a electric mixer toss in the egg whites and whip to soft peaks.(this is when you touch it with a spoon and it curls over.) Next add the sugar and mix 1 more minute. Reduce the oven heat to 275 then in a large bowl toss together the oats, oat bran, almonds, apple juice, honey, cinnamon and vanilla. Add the oat mixture to the egg whites then spread evenly on the baking sheet. Toast for 15 -30 until evenly browned. Stir often. Removed when lightly toasted and let cool. Add raisins. Keep it in a sealed container.
Note: Any combinations of nuts can replace or add to the almonds. I have used dried cherries, cranberries, blueberries and apples to this. I've added flax seeds and sunflower seeds. So try your favorites and see what you can come up with.
