Dijon Vinaigrette

2 tbsp red wine vinegar
Juice of ½ of lemon
2 tsp Dijon mustard
1 shallot, minced
½ cup extra virgin olive oil

In a small bowl toss in the first four ingredients and whisk together. Gradually whisk in the oil. Season with salt and freshly ground black pepper.
