
2 cups sliced zucchini
2 cups sliced red, yellow and green peppers
2 cups broccoli tops
¼ cup chicken broth
2 garlic cloves, minced
1 tbsp fresh bail or oregano, chopped (1 tsp if dried)
3 tomatoes, chopped
Fresh ground black pepper
In a skillet toss in zucchini, sweet peppers, broccoli, broth, garlic basil and pepper. Bring to a boil then reduce heat to low. Cover and simmer for 7 minutes, Remove from heat and stir in tomatoes. Salt and pepper to taste, if desired.
