Easy Broccoli


1 pound broccoli cut into florets
1/2 red sweet pepper, cut
1/2 yellow sweet pepper, cut
2 tbsp Butter
1 tsp lemon zest
1 tbsp lemon juice
Salt and freshly ground black pepper to taste


In a large pot add about 1/2 inch water at bring to a boil then toss in the broccoli and pepper , cover and turn down to low and let simmer. OR place the broccoli and pepper in a steamer basket and simmer. (about 8 to 12 minutes for both methods) veggies will be crisp yet tender. Drain. In a small pan melt the butter, toss in the lemon juice, the zest and pepper. Drizzle this over broccoli. Use salt only it you desire.
Optional- I have substituted yellow and green squash for the broccoli in this recipe and it tasted wonderful.
