Buttery Acorn Squash



2 acorn squash
2 tablespoon butter
4 tablespoons brown sugar


Cut the squash in halves and remove seeds. On a baking sheet place the acorn halves cut side down and bake at 350 for 45 minutes. Remove from oven and turn cut side up. Toss in 1/2 tbsp butter and 1 tbsp brown sugar into the middle of the each squash half. Now put the two cut side halves together and place either on the baking sheet or a baking dish. The dish will help it stay together and not slide around. Toss it into the oven for 30 minutes. Serve warm.

optional garnish -sprinkle cinnamon on top

Note: Serves 4. You can cut a small amount off the underside of the squash half to keep it from rolling around. Sometimes when I'm in a rush I just toss the butter and brown sugar into the middle, slice a bit of the bottom off and place on baking sheets. This allow me to make more and I bake for an hour or 1 1/2 hours.

Another combination- Some people don't like the sugar so you can omit the sugar and add salt and fresh ground pepper, a little garlic powder and a dash of paprika (this is mostly for color) cook as directed above.
