
6 slices bacon, chopped
1 small onion, chopped (about a cup)
1/2 cup celery, chopped
1/2 cup dried apricots, chopped
6 cups day old bread, crust removed and diced
1/2 cup pine nuts, toasted
/14 cup parsley, fresh and chopped
1/4 cup cranberry sauce or jelly
2 tsp orange zest
Salt and freshly ground black pepper
In a skillet cook bacon until golden. Next, cook onion and celery over medium heat until soften or about 5 minutes. In a large bowl toss in the apricots, bread, pine nuts, parsley, cranberry sauce, orange zest, cooked bacon, onion and celery mix well. Add salt and pepper if desire. This is now ready to stuff the turkey with.
