
1 pound milk chocolate
1 cup cashew, toasted and chopped
1/2 cup dried apricots, finely chopped
1 tbsp orange rind, grated
Line a baking sheet with parchment paper. Toss chocolate in a bowl and place over a small sauce pan of simmering water. ( do not boil the water or bowl to sit in the water). Stir until chocolate is almost melted. Remove bowl and stir until chocolate is smooth. Toss in the cashew, apricots and rind. Spread on the baking sheet and let stand until cool. You can refrigerate if needed.
