Chocolate Sandwich Cookies


2 packages devils food cake mix
1 cup canola oil
4 eggs

Filling
1 package cream cheese (8 oz)
1/4 cup soft butter
2 1/2 cups powdered sugar
1 tsp vanilla extract

In a large bowl or mixer, toss in the two cake mixes, oil and eggs and blend well.  Roll into 1 inch
balls (use a small ice cream scoop) place them 2 inches apart on ungreased cookie sheet.  
Bake at 350 for 8 minutes and beginning to crack, the cookies will flatten as they cool. 

In a small bowl toss in the cream cheese and butter.  Mix until fluffy.  Then gradually toss in powdered
sugar, and vanilla.  Mix until smooth. Spread this mixture on the bottom of the cookies and top with another
cookie.  

These freeze well.   Optional- I fill these with ice cream instead of the frosting and they make wonderful treats.
