1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup butter
1 cup light brown sugar,packed
1 cup sugar
1 cup extra crunch peanut butter
2 tsp vanilla extract
2 eggs
1 cup peanuts, chopped very finely ( pulse in a blender )
In an electric mixer toss in butter and sugars and blend until light and fluffy. Toss in
peanut butter and mix well. Next, beat in vanilla, then the eggs one at a time, scraping down the
bowl with each egg. In a small bowl, toss in flour, salt, soda, baking powder, and slowly add this
to the wet mixture until it all is combined. Toss in the peanuts and mix just lightly.
Take 3 tbs of the cookie dough and roll into balls. Place them 2 in apart, Take a fork and press it into
the round balls to make a cross design on each. Bake at 350 degrees until the edges are golden and
centers have puffed. about 10 minutes. Note- I rotate the cookie sheet after 5 minutes of baking.
Cool the cookies on the baking sheets then serve or transfer to a wire rack to let cool.
Optional -I fill these with ice cream and freeze for summer treats. You can get creative with different
types of ice cream.
NOTE- move the oven racks to the upper middle and lower middle positions
Line the baking sheets with parchment paper or a silica pad.
