Squash Kabobs

1 Butternut squash, peeled and seeded  (2 pounds)
3 Tbsp butter, melted
1 Tsp curry powder
1/4 tsp salt
olive oil


Cut Butternut squash into 1 inch cubes.  Place them on a oiled baking pan or dish. In a small bowl combined melted butter, curry powder and salt.  Pour over squash and coat well.  Bake at 450 for 20 minutes or until tender and lightly brown.  Stir when needed.  Cool, then thread the cubes onto 12 skewers. Grill, covered over medium heat for 4 minutes on each side. serves 12


Option- Costco has precut butternut squash. This speeds up prep time.
