Apricot Honey Chicken

4 boneless skinless chicken breast halves
1 Tbsp Canola oil
3 Tbsp Apricot Preserves
2 Tbsp orange juice (1 fresh squeezed orange)
4 Tsp honey

In a large skillet, on medium heat, toss in chicken and oil and cook until juices run clear.  (about 8 minutes) In a small bowl toss in the preserves, orange juice and honey and mix well. Spread this mixture over the chicken and cook for about 2 minutes.

Note- Chicken tenders can be used or any other type of chicken you like.  Adjust cooking time for chicken.

Additional Option- Costco has a orange, mango, peach preserve that is fantastic and can be substituted for the apricot.  Serves 4

Laurie, Good to "see" you back here again. Must mean the year of the baby has passed. We just hit that mark, slowly remembering what it's like to get a few extra things done besides the necessities. Thanks for sharing your talents with us, this one looks SO good!
