Apple Stuffing

Here are two versions
#1

1 package stuffing mix (stovetop)
1 granny smith apple
1/3 cup onion, chopped
1/4 cup celery, chopped
1 tbsp butter

In a large sauce pan toss in the apples, onion, celery and butter.  Cook until tender.  Meanwhile, prepare the stuffing mix using the package directions. Once this is ready add this to the apple mixture and mix well.

2  Granny smith apples, chopped

1 large onion, chopped
1 large carrot,  chopped
3 stalks celery, chopped
3/4 cup butter
1/2 cup parsley, chopped
1/2 cup fresh sage Leaves, chopped
8 cups dried bread or stuffing 
2 cup chicken stock
Salt and fresh ground Black pepper

In a large skillet toss in the apple, onion, carrot, celery and 2 tablespoons of the butter, heat on medium  about 10 minutes until tender.  In a large bowl toss in the herbs, and bread in a large bowl. Add onion, carrot, and celery mixture. Melt the rest of the butter and add enough of the butter and stock to lightly moisten the bread without allowing it to become soggy.  Mix dressing gently, and season with salt and pepper.  Spoon dressing into a buttered baking pan and cover with foil. Bake at 350 degrees for about 45 minutes. Remove the foil and bake for an additional 15 minutes.
