Sweet Potato Pie with a Twist

1  pie crust 9"( Use my Flaky Pie Crust Recipe)
1/4 cup cream cheese
2 cups mashed sweet potatoes
1 cup coconut milk
3/4 cup brown sugar, packed
3 eggs
2 tsp lemon juice
1 1/2 tsp vanilla
1/4 tsp salt
1/4 tsp cinnamon, ground

Meringue
4 egg whites
1/4 tsp cream of tarter
1/2 cup sugar
1 jar of marshmallow creme


Prepare the pie crust and fit in into a 9 inch deep dish pie plate.  Pinch the edges of the crust.  Next you will bake the crust for 5 minutes at 425 degrees, cover with tin foil and if you have some dried beans or pie weights place them on top of the foil.  Remove from the oven and cool. Reduce the oven temperature to 325 degrees.  In a large bowl toss in sweet potatoes, eggs, lemon juice, vanilla, salt and cinnamon. Next, in a small sauce pan toss in the coconut milk, brown sugar, and cream cheese at medium heat, stirring until combined and smooth. Let this sit for about 5 minutes and then gentle pour into the large bowl and stir until combined.  Pour into crust.  Bake for about 1 hour or when a knife is inserted into the middle comes out clean. 

Meringue
In an electric mixer toss in the egg whites and cream of tarter.  At medium speed mix until soft peaks form.  Once you have soft peaks slowly add the sugar at high speed until all the sugar is mixed in and  continue beating until you see glossy stiff peaks forming.  Next, in a large bowl toss in the marshmallow creme and fold in about 1/3 of the stiff peak mixture, combine and then fold in the rest of the stiff peak mixture.  Combine well and then spread over the top of the hot pie.  Bake for 12 minutes or until the top is lightly brown. Cool for at least 1 hour.  If you are making these ahead of time store in Refrigerator.  

Stiff Peaks

Note- 
*Cover the edges of the crusty with foil to prevent them from becoming brown. Do this at the last 15 minutes or when you notice the edges browning. 
* I like this pie after its been refrigerated at least 3 hours before serving.  You can decorate the top by sprinkling marshmallows (different colors or flavors) and coconut. 
* If you use beans or rice for the pie weights remember to discard them or continuing using them for pie weights.  Do not cook with them after you use them for weights.
