3 pounds red potatoes
1/2 cup butter
1/3 cup fresh Italian parsley, minced
1 tbsp lemon juice
Sea salt and fresh ground black pepper
In a large pot toss in the potatoes and cover with water. Bring this to a boil then lower the heat and cook for 20 minutes or until tender. Drain and place the potatoes in a serving bowl. In a small sauce pan toss in butter, parsley and lemon juice, cook at medium heat until butter is melted. Pour this over potatoes.
Note-
*You can take a potatoes peeler and remove several strips of the skin at the middle of the potato. This give a nice presentations.
* You can also turn this into a mash potatoes, simply toss the hot, drained potatoes into a large bowl or mixer, and low, medium speed slowly add the butter mixture This will make chunky mashed potatoes if you want smooth continue mixing. Season with salt and pepper to your taste.
