1/2 cup apple juice or vegetable broth
3 tbsp vinegar
2 tbsp celery, chopped
1 tsp sugar
1 leek, chopped white part and a little of the green part
1/2 cup of butter, cold
1 1/2 pounds fresh green beans
1/4 cup water
In a large pot toss in the green beans and the water. On high heat bring water to a boil, cover and turn the heat to medium. Let them steam until they are dark green. Meanwhile, in a small sauce pan toss in the apple juice, vinegar, celery, chopped leeks, and sugar over medium heat. Cover and bring to a boil. Cook this until the liquid had reduced by 2/3's. Next, slowly whisk in the butter until all of it is mixed in. Drain the the green beans and place in a serving dish then, pour the butter mixture over the green beans.
