First,of all, I don't know if many of you know this but I love Greek food. Second, it is really hard to find a n authentic greek restaurant, and I mean really hard.
I found one in Herndon, VA called Savannah's about 13 years ago. My husband and I went their every friday with our two boys. The fire pit with the lamb roasting, the warm and cozy atmosphere and then the food, oh so good. When we moved to the west coast I had serious withdrawals. I've missed that place. I decided to surprise my husband and fly to Virginia to OUR restaurant. I was so gettie that I almost couldn't keep it a secret however, upon further planning and to my dismay it had closed. So I sent my brother to Herndon just to make sure. Yep, closed, gone, no longer in business. All my plans changed. I spilled the idea to my husband. I needed some support.
I've made my own version of Gyros, Souvlaki, Gemista, Fasolakia Tzatziki and Baklava. I've found some recipes throughout the years but the one thing I haven't really learned to make is the bread pita. I've lacked this major component for the Gyro and it's vital to experiencing a great greek cuisine.
One day at Costco I just happen to pass by the cheese section and in the far corner by the dairy section I see a small crate with the words GREEK. I couldn't resist so I hurried by and to my amazement I see Greek Pita Bread. It was moist and looked very fresh. I tossed one in my cart and I couldn't wait to try them. I still can't believe it was over in the corner, nowhere near the bread section but boy was I excited. I opened it and torn off a piece, yep it was good, I mean really good.
I can now make a true gyro. But not just gyros, they make wonderful last minute pizzas. I've made spinach, dried tomato and feta mini pizza, pepperoni, cheese, and much more. My boys can make them in minutes just on broil. I put them in their lunches. They are just wonderful. So if you enjoy greek food or are a bread enthusiast I urge you to try them. They come in wraps, pockets, tortillas and even bagels.
