Quick and Easy Turkey Soup

Use your leftover Turkey from Thanksgiving.  It's a cold, rainy day today and I had everything in my pantry.  I used leftover rolls I made and it turned out wonderful.

1 Onion, minced
2 Tbsp extra virgin olive oil
1 Garlic clove, minced
1 Carrot, chopped
1 Celery, chopped (use a whole stalk)
1 Tbsp Sage, chopped (you can use 2 tsp dried)
1 Bay leaf
8 cups Broth (chicken)
 2 Cups Fresh green beans, 
1 Cup sweet potato, diced ( I use 1 whole sweet potato)
1/2 Cup Orzo pasta, uncooked ( you can use any pasta you like)
2 Cups leftover turkey, diced


In a large pot toss in the olive oil and onion and saute on medium heat until brown.  Next, toss in the garlic, carrot and celery.  Saute for about 5 minutes.  Then toss in the sage, broth and the bay leaf and bring to a simmer.  When it begins to simmer toss in the green beans, sweet potato and the pasta.  Continue to simmer for about 8 minutes until veggies are tender.  Finally toss in the turkey and remove.  Cover and let sit for about 5 minutes, then serve. Serves about 6.
