Pumpkin Cookies

We love this pumpkin cookie recipe.  It subtle flavors blend together and make a moist and delicious cookie.  The perfect fall treat for family and friends.  A wonderful treat for school lunches or fill a plate and take them to a friend. 

2 cups Butter, at room temperature
3 cups Brown Sugar 
2 cups Pumpkin
4 Eggs
1/2 cup Fresh ginger
1/2 cup Sour Cream
1 1/2 Tbsp vanilla
6 cups Flour
1 1/3 Tbsp Baking powder
1 1/3 Tbsp Baking soda
2 tsp Salt
2 tsp Cinnamon

Additional Options
4 cups Walnuts finely chopped
3 1/2 cups raisins
4 cups cinnamon chocolate chips
4 cup Chocolate chips

I like to add raisins and walnuts.  My kids like the cinnamon chips.  The chocolate chips are favorites too.  Experiment with them and see which option you prefer.

In a large electric mixer toss in the butter, brown sugar and blend together.  Next, toss in the pumpkin and eggs.  Mix well.  Then add the ginger, sour cream and vanilla.  Combine well.  In a bowl toss in the flour, baking powder, soda, salt and cinnamon and stir until combined. Slowly add this to the wet mixture and mix well.  Next Stir in your combination of any or all of the options listed above.  This makes plenty of cookies so if you want to try all the combinations divided the batter in half or thirds and add the options in.  Bake at 350 for 12-14 minutes.  

Now your home will be infused with the aromas of pumpkin, cinnamon and ginger.  Aahh, the smells of fall. 

Note- This recipe makes about 60 three inch cookies.  You can cut the recipe in half if you prefer a smaller batch.
