Homemade Cornbread

I just made this yesterday and realized I hadn't posted it. It's really hard to get a rich, moist cornbread.  This old recipe is just that.  It's easy to make and very moist, once you try it you'll love it.  It goes great with a hot bowl of chili.

1 cup cornmeal
3 cups flour
1 tsp salt
2 tbsp Baking powder
1 1/3 cup sugar
1/3 cup butter
2 Tbsp honey
2/3 cup canola oil
2 1/2 cup buttermilk (or anything you have on hand)
4 eggs

In an electric mixer toss in the eggs, and beat well. Next, toss in the buttermilk, oil, butter and honey and blend well.  In a small bowl toss in the cornmeal, flour, salt, baking powder and sugar. Whisk together and then pour this into the electric mixer.  Mix until incorporated.  Butter or use cooking spray to coat a 9 x 13 pan or use 2 round glass pie dishes (I use the latter). Bake at 350 for 35 minutes or until a knife when inserted comes out clean.  Lightly butter top and then let cool.  

Note- you can make these into muffins, just use a muffin tin.
