In a medium bowl, toss in the flour, baking powder, baking soda and salt, whisk together. In an electric mixer toss in the shortening and beat on medium-high speed until soft and fluffy. Beat in the eggs one at a time, mixing well after each one. Toss in the sour cream and vanilla and mix until creamy.
Now gradually at the flour mixture just until incorporated and evenly mixed. Next, put the dough into the refrigerator for at least 2 hours. Next, divide the dough into two portions. Roll out one section at a time, about 1/4 inch thick. Use flour if it begins to stick but don't use to much. Use your favorite cookie cutters and scrape the shaped dough up and place on cookie sheets. Bake at 350 for about 9 minutes just until they start to brown on the edge. Remove and cool on wired racks.

Frost with your favorite Frosting. Below is a simple one. You can add color paste for color options.

2 cups powdered sugar
2 Tsp butter, room temp
1 Tsp vanilla
2-3 Tsp milk.

Toss everything into a electric mixer and blend well. Separate into bowls if you are using different colors.
